Miko’s imagination has led to viral sensations like his ketchup-and-mayo gelato with hot chips, as well as his “Don’t Doughnuts” pop-up in Sydney, featuring sourdough doughnuts filled with Basque cheesecake and finished with brûlée. His creativity is deeply influenced by his Filipino heritage — a culture that values openness, experimentation, and emotional expression — which he brings into every dish.


In 2025, Miko reached a new milestone, appearing as a guest chef and judge on MasterChef Australia’s Season 17 Grand Finale, where he presented his signature “Botanical Garden” dessert challenge to the finalists. This moment marked a powerful debut for Miko on one of the world’s biggest culinary stages.
